We need to know how miso ramen came to be before we delve into the history of butter ramen.
Miso ramen may have already crossed beyond Japanese borders to become one of the most popular ramen varieties, but it is believed to originate in Hokkaido during the mid-20th century.

Miso ramen's creation was accidental. In a popular account, the discovery took place at a restaurant called Aji no Sanpei in Sapporo. An inebriated customer made an unusual request to have noodles added to their miso soup. This was quite different from the customary way of serving ramen with a clear, soy sauce-based broth. 

Aji no Sanpei embraced this creative idea and started using miso, which lent a wonderfully rich and savory flavor to their ramen. The unique taste quickly gained popularity and thus, miso ramen was born!

Hokkaido ramen marked a shift from the typical pork bone-based broth seen across the country. The credit for this flavorful twist goes to the innovative chef, Morito Ohmiya. He came up with this new version to make ramen less greasy.

 

The Addition of Butter

Miso Butter Ramen Recipe

 

Servings: 4

Ingredients:

  • Olive oil (2 teaspoons)
  • Minced garlic (1 clove)
  • Minced fresh ginger (1 teaspoon)
  • Ground pork (2–4 ounces)
  • Rinsed bean sprouts (5 ounces)
  • Sweet corn (2 tablespoons)
  • Chopped scallions (2 tablespoons)
  • Low-sodium chicken broth (4 cups)
  • Low-sodium soy sauce (2 teaspoons)
  • Miso (4 tablespoons)
  • Ramen noodles (6 ounces)
  • Toasted sesame oil (1 teaspoon)
  • Pickled ginger (2 tablespoons)
  • Finely diced butter (2 tablespoons)
  • Grated cheese (2 tablespoons)
  • Salt and pepper (to taste)

Procedure:

Use a pot or wok. Heat the olive oil then add the following:

  • Minced ginger
  • Garlic
  • Pork

Over medium heat, cook the meat until the pinkness is gone. Add the following ingredients and saute and stir frequently:

  • Corn
  • Scallions
  • Bean sprouts
  1. Pour the chicken broth and then add the soy sauce. Bring to a boil.
  2. Turn to low heat then dissolve the miso. Add sesame oil to the soup. Remove from heat, afterward.
  3. While you cook your soup, cook your noodles in boiling water according to instructions (generally, it's two minutes).
  4. Add the cheese, butter, and pickled ginger. Then add the noodles. It is now ready to serve.

In Sapporo, you’re bound to see shops that serve not only miso ramen but also a creamy version of shio ramen. We say creamy because the chefs add locally made butter and cheese to the traditional ramen dish.

Ingredients:

  • Sapporo Ichiban Ramen (1 packet)
  • Cheese (1 slice)
  • Butter (1 slice)
  • Egg (1 piece)

Instructions:

  1. Bring water to a boil (see the label for the amount of water required).
  2. Cook the noodles for one minute.
  3. Add the soup base.
  4. Add a small piece of butter.
  5. Place a slice of cheese on top.
  6. Mix well until you no longer see the pieces of cheese and butter.
  7. Add the egg.
  8. Place your ramen in a bowl. Garnish it with green onions. Then it’s ready to eat!
